     Add onion and garlic to pan with 1 tablespoon olive oil; cook until soft but not browned (about 5 minutes). Stir frequently so they don't burn!

     Add carrots into same pot along with any other vegetables you're using—onions are enough here so don't worry about adding too many other things just yet! Cook for 5 more minutes then deglaze by adding broth or wine mixture from previous step
