Creamy Chipotle Sauce

Yield: enough for 4 to 6 bowls. Ingredients: 1 can chipotle peppers in adobo sauce, drained and chopped; 1/4 cup mayonnaise; 1/4 cup plain yogurt; 1 tablespoon honey; 1/4 cup mayonnaise; 2 tablespoons lime juice; 1/2 teaspoon kosher salt; 1/8 teaspoon coriander powder; 1/8 teaspoon cumin powder; 1/8 teaspoon smoked paprika; 1/4 teaspoon garlic powder; 1/2 cup unsweetened coconut milk; 1/2 cup vegetable oil; 1/2 cup water; 1/2 cup grated cauliflower. How to make the best chipotle sauce: 1. Add the chipotle peppers, mayonnaise, yogurt, honey, mayonnaise, lime juice, salt, coriander, cumin, smoked paprika and garlic powder to a blender; pulse to combine. Transfer to a bowl and stir in the coconut milk and vegetable oil.

Instructions

- In a blender, combine milk Greek yogurt, mayonnaise, chipotle peppers, garlic, lime juice, olive oil, honey, and salt & pepper to taste. Process until smooth and creamy.

- Use immediately or refrigerate in an airtight container for up to 5 days.

VEGAN NOTE: This chipotle sauce is made with dairy-free Greek yogurt. If you are vegan, you can use coconut yogurt, agave-sweetened coconut milk, or coconut milk yogurt. Be sure to check the ingredients to make sure that it doesn’t contain any animal ingredients.

VEGAN: I used vegan mayo in this recipe. If you are vegan, you can use vegan mayo, which is a little sweeter and more tangy than regular mayo. Maple syrup and agave are a great alternative to honey in this sauce.
